Overheard

What your guests hear now. What they could.

Three questions a guest asks every night, and the difference a floor that knows your list makes.

"We're having the olives. What should we drink?"
Now
I'll check with the bar.
Ready
The Grüner by the glass. Peppery and herby, and the acidity freshens up all that salt.Gordal olives · Bründlmayer Grüner Veltliner, £11
"Is the English fizz any good, or should we get Champagne?"
Now
Both are popular.
Ready
It's from Sussex, crisp and zesty, like a green apple with a hint of lemon. Lovely with the oysters.Nyetimber Classic Cuvée, £14
"We'll have the Amarone with the olives."
Now
Great choice.
Ready
It's big and sweet-edged, so it'd flatten the olives. Shall I bring the Sancerre, and the Amarone for the lamb?A steer, and a bottle instead of a glass
What it's worth

Knowledge sells wine. Count it.

A floor that can say why a bottle suits the table sells the bottle. Put your own numbers in and see what a 2, 5 or 10% lift is worth at your place.

One glass becomes a second.
A round of house red becomes the bottle that suits the mains.
A pairing printed beside the dish gets sold by someone who can explain it.

We claim no lift for you. Once your till's sales are in, the console measures the real one.

How it works

From a photo of your list to a floor that's ready.

1

Send us your list.

A photo of the list and the menu. We write the training for every bottle and every dish, in your words if you like.

Upload the list, the menu, or one bottle from its label
2

Train on the floor.

Minutes before service, on their own phone, on your wines and your dishes. Tested, not told, so it sticks.

A question before service
3

Know who's ready.

One readiness figure per person, checked without warning, against the standard you set for each role, every service.

For the manager

Saturday, 5pm. Who's ready?

Readiness is what each person can actually say about your list tonight. Tested, not told. Sales never move it; they only decide what gets learnt first.

Your kind of room

Pub to fine dining. Your standard, not ours.

A bartender needs one true sentence about each wine. A sommelier needs all of it. You set the bar per role; everything follows.

Fair questions

Before you say yes.

Our list changes every week.

Good. Send the new one, or photograph the new bottle, and the training follows the same day. A new vintage is the same wine moving on; nobody relearns it.

My staff won't do homework.

It isn't homework. It's a few minutes before service, on the phone they're already holding, about tonight's wines and dishes.

Will it write nonsense about my wines?

Every card is grounded in checked facts about the region and the grape, written against your list, and you read it before anyone else does. Rewrite any line in your own words.

What about our till?

A sales export from any till works today. It tells us what sells and who sells it, so what matters most is learnt first. Square is next. Sales never change anyone's readiness.

What does it cost?

Per site, per month, any number of staff, with tiers by the size of the team and the list and the standard you want. Pilot rates for the first restaurants; groups by conversation.

Where does our list go?

It's read once to write your training, which stays with your restaurant. No guest data, nothing sold on. The same standard for one pub or a group of forty.

Test your list

Ten of your wines, as your staff would learn them.

Send one page of your list. We'll read ten wines and show you their cards in a minute, then send a readiness plan for your floor.
